Breakfast Recipes (3) - Chocolate Chip Peanut Butter Smoothie Bowl
Alright all you breakfast lovers, this tasty morning meal is hands down the best indulgent + nutritious breakfast that I have ever eaten. If you're anything like me and have the biggest sweet tooth + love for chocolate, than this bowl will be right up your alley! Not only does it taste like a frozen dessert, but it is also entirely gluten-free + vegan (in case you're into that like I often am). As always, keep in mind that these recipes can be adjusted to your discretion; it's also important to note that I'm someone who cooks/makes meals sans measurements, so I've guestimated the appropriate measurements for each ingredient, but again just use your smoothie knowledge and adjust items how you see fit! Let's get to it! If you want to kick this bowl up a notch, you need to make the following recipe beforehand so that you have them on hand when you want to whip up this smoothie. This is a recipe from the incredible "Oh She Glows" cookbook by Angela Liddon, and is for Peanut Butter Cookie Dough Bites:
Ingredients 1 1/2 cups gluten-free rolled oats 2 tbsp coconut oil 2 tbsp smooth natural peanut butter 1/4 cup pure maple syrup 1 tsp pure vanilla extract 1/2 cup almond meal 1/4 tsp sea salt 2 tbsp dark chocolate, chopped (this can be vegan chocolate, milk, dark, whatever you would like!)
Instructions 1. Prepare the oat flour. In a blender or food processor/blender/bullet, blend 1/2 cup rolled oats until they are a flour like consistency. Set aside. 2. In a large mixing bowl, combine oil, peanut butter, maple syrup, and vanilla. Beat with a hand mixer until smooth. Add in the almond meal, oat flour and salt. Beat again until well combined. Fold in the chopped dark chocolate. 3. Roll the dough into small balls (about 1 tbs of dough). Place the finished bites on a baking tray lined with parchment paper. 4. Freeze bites for 5-10 minutes, or until firm. Store bites in the freezer in an air-tight container or freezer bag for quick access later.
Once you've made your cookie dough bites, you're ready to assemble your Smoothie Bowl; here is what I included in my own: 1. I blended together one frozen banana, 1/2 cup of almond milk, 2 cookie dough bites, 1 tbsp flax meal, 2 tsp of cocoa, and 1 tbsp natural peanut butter OR PB2. 2. Pour all of that into a bowl and top with more goodness. In the photo above, my bowl is topped with chopped banana, chia seeds, vegan chocolate chips, two more peanut butter balls (chopped), and drizzle natural peanut butter.
