Gluten Free Crepes - Recipe
I don't know where the sudden urge for crepes came from the other night when I was thinking of something to make for supper, but it certainly came on strong! The urge was a bit baffling for a few reasons, primarily because I had never, EVER before even made crepes--let alone ones that were gluten free. My mamma has made crepes for as long as I can remember in order to make nalesniki during the holidays (yes that really is a word--if you're Ukranian, you should know what I'm talking about); but rather than making nalesniki and filling my crepes with cottage cheese, I opted for a fruitier filling. There is a plethora of crepe AND gluten free crepe recipes all over Pinterest, but here is how we decided to make ours:
- 1/2 cup brown rice flower
- 1/2 cup millet flour
- 1 tbsp sorghum flour
- 1 tsp xanthum gum
- 1 tbsp white sugar
- 3 eggs
- 2 cups of milk
Simply blend all ingredients together in a blender (or whisk in a bowl) until well blended. Heat up a pan over medium heat and coat with non-stick spray; once the pan becomes hot, pour juuuuust enough batter to coat your pan in a super thin layer (this took some playing around with--our first one was much too thick!) If you happen to be super impatient like myself, it's best to let someone who doesn't anger easily tend to the frying pan haha. Once the crepe begins to look "dry" on the edges, work your way around it with a spatula/flipper and then carefully flip it!
Because it is a gluten free recipe--which always tend to be harder to work with--it will definitely take a couple "test" crepes to get the hang of it! Just have patience and persistence ;) Our crepes were filled with a mixture of plain greek yogurt & honey, sliced strawberries and bananas. They were topped off with a bit of icing sugar & melted peanut butter!
