Peanut Butter + Chocolate Steel Cut Oats -- Vegan Breakfast Recipe
Some mornings I crave something a little heartier than yogurt + granola, or a fruit smoothie for breakfast; so on those days I turn to one of my trusted tasty basic recipes, and then have some fun playing around with flavour + topping combos. My latest warm breakfast mix has been peanut butter chocolate steel cut oats with banana + berries. It only takes about 10 minutes altogether to whip up, and you can even make a double batch and save some for your breakfast the following day!
Here's what you're going to need for this recipe: -steel cut oats (I have the quick cook ones, otherwise you'll end up spending at least 30 minutes just getting them cooked) -vegan chocolate chips -peanut butter (Adams is my go-to!) -half a ripe banana (the riper the banana, the sweeter it'll be mixed into your oatmeal) -berries of choice -almond milk
HOW TO: cook your oats according to the directions. Once they're about 90% completed, toss in your mashed half a banana, your chocolate chips, and your peanut butter (I never measure haha so just go with however much you prefer!). Stir that all up until it's blended nicely, and then remove from heat. Scoop your oats into a bowl, top it with your berries (and leftover half of banana if you'd like), add a bit of almond milk, and enjoy!!
