Summer Taco Salad with Jalapeño Ranch Dressing

I don't know what changed to make me so incredibly OBSESSED with jalapeños over the course of the last couple of weeks, but let me tell you, those flood gates are now wiiiiiide open. Last week I went into the grocery store and bought 10 jalapeños; I didn't yet know what I was going to make or how I was going to use up all of these peppers, all I did know is that the upcoming week was going to be SPICY. Not only did we create this amaaazing salad, but I also experimented with a jalapeño-honey chicken marinade which happened to turn out super tastily! Consider this a warning that if you're into anything semi spicy, brace yourself for the tastiest salad you've ever had. I throw the salad term around lightly, because 1) this is so tasty it can hardly be considered a salad, and 2) it has bacon in it--enough said ;)

All jokes aside, this salad could not get any more perfect for summertime--I plan to bring it along on outdoor picnics, and it has certainly already become my go-to weekday lunch. Here is what I put in my variation of this salad; keep in mind that much like any other recipe, feel free to add/takeaway things, or change it up however you see fit. Also, if you know me, you know how "precise" I am when it comes to measuring ingredients....so feel free to adjust any dressing measurements to suit your own taste, I'm not a fan of measuring utensils haha.

DSC_7046This makes 2 servings:

  • 1 to 1.5 cups of lettuce (head or iceberg is my favourite)
  • 4-6 cherry tomatoes
  • one ear of corn, husked, cooked, and cut off of the cob
  • black beans
  • grated sharp cheddar cheese
  • crunched up tortilla chips
  • cut up bacon (YUMMMMM!!!)
  • diced red peppers (if you'd like!)

Here's the tastiest dressing (I used a magic bullet to make mine):

  • 2 tbsp of plain greek yogurt
  • a bit of "Hidden Valley Ranch" powder
  • a splash of milk (probably 1-2tbsp--or until it reaches your desired consistency)
  • half of a sliced jalapeño with the seeds and all! (the heat comes with the seeds!)
  • one minced clove of garlic

Just blend that all up in the bullet and coat your salad! I kid you not when I say that I've eaten this salad every single day this past week. I actually may have ingested so much jalapeño that it's starting to irritate my belly--is that a thing?? Either way, let me know if you try out this recipe or if you've made something similar!!
