Vegan Overnight Oats {Oh She Glows} - Recipe

I'm normally one who gets bored if I have to eat the same thing more than two days in a row, but I've been eating these overnight oats every single breakfast for the past two weeks and am still going strong. The best part about this breakfast--aside from the fact that it's gluten free--is that you can prepare a batch quickly one evening, and have it in the fridge ready to go for the days to come. This recipe is quick + easy, 5 ingredients, add them all into a bowl, stir, and let sit. You can also dress it up as little or as much as you want to to change things up. Here's what you need: 1 cup rolled oats 1 1/2 cups almond milk 1/4 cup chia seeds 1 large banana, mashed 1/2 teaspoon cinnamon


In the Oh She Glows cookbook, it says that it's best to leave the combo of ingredients sit refrigerated overnight so that the mixture thickens, but if you've run out of the oats and forget to make them the night before, I've found that you can whip up a batch in the AM and just let it sit in the fridge for about an hour (it should be thickened up by then!). I'll usually top mine with some cut strawberries/blueberries, peanut butter, ground flax seed, and/or a little maple syrup. MMMM. Yes, I'm about to go and get some of this out of the fridge right now.
